Palita and I met at one of my first Open Studios last year. We quickly connected over our shared Thai heritage, entrepreneurial inclinations, and love of Thai food. We knew from that moment that we needed to plan a dinner together. Fast forward to 2019 and many Instagram messages later, I visited Pink Salt at Fulton Galley and ordered everything on and off the menu. Twice. Experiencing the full range of Chef Palita’s talent lit a fire under me that could only be quenched by a collaboration.

I’m thrilled to be living in a city like Chicago where eaters are adventurous and already in love with Thai food. However, I do think Chicagoans are ready for a new wave of Thai food, authentic but hard-to-find dishes that go beyond Pad See Ew and Massaman curry. We’re excited to use this dinner as an opportunity to showcase some of our favorite dishes that are tough to find in local restaurants. We hope you’ll trust us to bring you on a journey of new ingredients, flavors, and textures.
