The chili oil is a week's worth of infusing oil, developing flavoring, and a combination of 5 different chilis that are fried at various stages to bring out the unique characteristics of each chili. It is meant to enhance a dish, not change it. Using the flavors to create balance and harmony and not to overwhelm anything it is paired with.
